Some people love their snow crab plain and simple: natural, unadorned, and sometimes even eaten with their hands! Others enjoy experimenting with its delicate meat and pairing it with other flavors. In a few restaurants in the Bas-Saint-Laurent region, the freshly caught king of crustaceans takes center stage on the menu, sometimes celebrated in its simplest form, sometimes creatively reinvented.

Plain and Simple

In addition to selling these delicious crustaceans at its two locations, La Poissonnerie Lauzier also serves them at its bistro in Kamouraska.

To satisfy purists seeking the raw, unadulterated taste, the crab is served there in a cone or in sections, on a plate accompanied by rice, salad, and garlic bread.

Simple dishes, but incredibly effective—and so popular that they make a much-anticipated return every season. Why change a classic?

At La Porte arrière in Rivière-du-Loup, we eagerly await the arrival of this exceptional product.

Each year, the kitchen team creates an original dish to showcase what lies beneath the shell, drawing inspiration from the moment, available ingredients, and culinary trends.

The size of the caught specimens is also taken into account.

In recent years, it has been served as an appetizer, delicately paired with avocado and hollandaise sauce, or as arancini with Migneron cheese.

One thing is certain: we can’t wait to discover the next creation from this Michelin-guide-selected restaurant!

This spring, Mange Grenouille in Rimouski isn’t holding back… or its claws! The seasonal restaurant is opening its doors early for a special occasion: a signature evening entirely dedicated to crab.

During a candlelit dinner on Saturday, April 18, the five-course meal—from appetizer to dessert—will showcase the crustacean’s succulent legs.

The 20 lucky guests will even have the chance to enjoy this exclusive gourmet experience accompanied by a piano concert. After all, crab deserves a little elegance…
